Default Weight Watchers Banana Bread

I'm about to make this (found it online)....it's only 3 pts per BIG slice and no fat!!!!

This is my grandmother's banana bread recipe. It's delicious and has been a family favorite for as long as I can remember. I have made the recipe low-fat by using applesauce and egg whites. (The original recipe called for Crisco and whole eggs.) Enjoy!


Ingredients:

1/3 cup no-sugar-added applesauce (or Crisco shortening)
½ cup sugar
2 egg whites or Eggbeaters
1¾ cup flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1-2 mashed bananas (I use 2 - brown mushy bananas work best!)
cooking spray (to grease pan)

Directions:

Cream together applesauce (or Crisco) and sugar. Add egg whites and mix well. Add in salt, baking powder, baking soda, and flower. Add bananas one at a time and mash w/potato masher or large whisk until mixture is smooth.

Bake 350º for 45 minutes in greased loaf pan.


Nutritional Info:

(per serving, made with applesauce) calories: 137, fat: 0, fiber: .81
(per serving, made with Crisco) calories: 247.5, fat: 9, fiber: .68


Notes:

The bread will be slightly chewier and will not rise quite as much when using the applesauce, but is still very good and definitely worth the 3.2 pts per slice. If you divide into 8 servings as suggested, the slices are nice and thick! If you want, you could even cut the loaf into 10 thinner slices and servings will be 2.6 pts apiece.

P.S. I asked my husband to compare the two (Crisco vs. applesauce) and he could not even tell the difference!

I'm not "officially" on WW...but my mom has done it in the past...so I know the routine...It just sounded good & I'm all about lowering the fat....on my stomach, butt & thighs...hehe

Okee dokee...it's in the oven. I added 1/2 tsp of cinnamon just for a little extra sumpthin' sumpthin'...I think it would be great with some crushed walnuts mixed in & on top...added health benefits too! I forgot to mix in some Benefiber....but I'd do that too just to boost the healthy factor....I used 2 bananas...(the recipe calls for 1-2)

Here's the finished product...it rose more than I expected...I can't wait to try it!!!! It looks just like the picture on the recipe And yes...I hate my "canteloupe" colored counters...I can't wait to get new ones....Ugh!
