I took out boneless, skinless chicken thighs.......but for some reason ...
LOL! OMG, I'm doing the same thing. I pulled chicken out to defrost and that's as far as I have gotten. I have no idea what to do with it. Italian dressing chicken sounds good but I don't have enough time to defrost and marinate. Maybe I'll just do a dry rub of paprika, garlic, onion powder, and Italian seasoning and bake it.
Or you could cook it in some teryaki sauce and make some sticky rice....that is what I am doing tonight, I completely forget when I posted a minute ago. I buy this already made sticky rice from the grocery store and I LOVE it...

You could make some shredded chicken sandwiches. Just boil the chicken till it's done, take out the bone, shred it up and add some cream of mushroom soup, chicken broth ( or use the broth the chicken boiled in ) add some saltine crackers to thicken it up and help give some extra taste, salt and pepper and serve it on buns. It's easy to make, doesn't take a whole lotta time and it's easy clean up too. This is GREAT for big parties too. A little bit goes a LONG way. I normally do this at all our "indoor" b-day parties.
P.S I know that you are a little health conscious right now so you could use fat free cream of mushroom soup and fat free crackers too.
This is going to sound stoop-id, but can you do this with boneless as well?
Not sure who your asking on this one, but if your asking me, then yes, you can. Just makes it alot easier of a job to make...lol Saves you the time of having to take the meat off the bone.
Also you could brown it in a skillet, not cooking it, just browning the outside, put it in a pan or baking dish, cover it with cream of mushroom, bake it in the oven and have white rice and some kind of veggie with it. the gravy from the meat is perfect to put over the rice.
Yeah, Amy, I was asking you, but then after I hit REPLY I realized what you had wrote what not what I had read and I felt even more stupid for asking! Hah hah hah! I do the same thing with barbecue sauce for chicken barbecue sandwiches. And pork.
I actually ran right to the stove and am broiling some chicken in seasoned chicken broth right now and I am going to shred it and mix in some teriyaki sauce for some Asian chicken barbecue sandwiches on whole wheat rolls!

that sounds good Kristina! I am eating my dinner a bit early today lol 4 o'clock...I am hungry, I didnt get to eat breakfast because I fell alseep on the couch with Adrien this morning. But anywho, I just cooked some chicken, added so Kikoman teriyaki sauce, a bit of honey and it is soooo good! Taste just like Kyoto express...if ya'll have even heard of those lol

I would say maybe 2 points for the chicken, 3 if you load it on, 2 for the roll, 1 (to be safe) for the barbecue sauce, what do you think 5 or 6 points? Oooh, and add a little minced onion! Or dice up some peppers!
The pulled teriyaki chicken on whole wheat was awesome! And, Christi, I loved the idea of putting a bit of honey with the sauce. It took a little of the bitterness out of it.
