Here are some of my favorite chocolate cake & cookie recipes.

Mud Pies

2 cups sugar
½ cup milk
½ cup shortening
5 Tbsp cocoa
½ tsp salt
1 tsp vanilla
3 cups rolled oats
1 cup coconut

In a saucepan over medium heat, mix first six ingredients until it reaches the boiling point. Boil for 30 seconds and then remove from the heat. Mix in rolled oats and coconut. Drop by teaspoon onto wax paper and let harden. You can use 4 cups of rolled oats and not the coconut.

Chocolate Confetti Squares

¼ cup butter
½ cup peanut butter
1 cup chocolate chips
8 oz bag small colored marshmallows

Melt butter and peanut butter in a saucepan. Add chocolate chips and stir until melted. Cool so you can hold your hand to the bottom of the pan. Add marshmallows and stir until all are coated. Line a 9x9 pan with was paper and fill. Keep refrigerated.

Chocolate Cake Mix Cookies

Preheat oven 375°.

1 box chocolate cake mix
½ cup rolled oats
2 eggs
½ cup melted butter
1 cup chocolate chip
1 cup chopped walnuts

Mix all the ingredients together well. Spoon onto greased cookie sheet and bake for 10 – 12 minutes.

Mayonnaise Chocolate Cake

Preheat oven to 350°.

1 cup sugar
1 cup mayonnaise
1 cup cold water
½ cup cocoa
1 tsp vanilla
2 tsp baking powder
1 tsp baking soda
¼ tsp salt
2 cups flour

Cream sugar and miracle whip. Add the rest of the ingredients in order. Pour into a greased 8x8 baking pan and bake for 45 minutes.

Peanut Butter Pie

1 8oz. package of cream cheese

1cup creamy peanut butter

3/4cup sugar

1 Tbs. vanilla

1 tub of cool whip thawed, divided

1 graham cracker crust

mix cream cheese, peanut butter, sugar and vanilla with electric mixer on medium speed untill well blended. Gently stir in 1 1/2 cup cool whip. Spread filling inside graham cracker crust. Refridgerate for 4 hours minimum or over night untill firm. Garnish with remaining cool whip.

My girlfriend made this for us the other night. Oh my goodness was it so good. I'm going to try making it with either Chocolate chips or rasins when I try making it.

I was just thinking the same thing! Not sure I can make myself cook that. But it must be good if she called it one of her favorites!

The cake has a very, very, very, very slight tang to it but the mayonnaise really just takes the place of eggs. Unlike eggs though, it keeps the cake very moist for a lot longer. This is my go to chocolate cake recipe and again its one that my mom and grandmother have been making for ages. Not one person who's tried it hasn't liked it so it might be weird to make but its super yummy!
