Since I consider you the Cake Making Queen, I wanted to know if you knew of any tricks on keeping the red & black Wilton icing colors from making the icing taste a little bitter? I don't have much of it in the fire man cake, but was going to do a firetruck cake as well and that is mostly red, I can switch it and make it yellow instead if there aren't any tricks.

Also, I wanted to thank you, and everyone else for their kind words on my practice cake. It really helped my confidence to know that it looked okay/pretty good to all of you, especially those of you that excell in the cake baking world!! : )
