Eggnog Muffins
1 and 1/2 cups eggnog
1/2 cup rum
4 cups flour
2 tbsp. baking powder
1 tsp. salt
1 1/3 cups sugar
2 eggs
2/3 cup canola oil
1 tsp. nutmeg
In a large mixing bowl, sift together the dry ingredients. Stir in egg, oil, eggnog and rum.
Fill muffin pans. Sprinkle tops with nutmeg. ake 20 minutes at 350 degrees.
