Blueberry Coffee Cake
2 cup flour
2 and 1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup shortening
3/4 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup milk
1 and 1/2 cup blueberries
FOR THE TOPPING:
1/4 cup sugar
2 teaspoons flour
1/2 teaspoon cinnamon
1 Tablespoon butter
Mix dry ingredients and set aside. Beat shortening, sugar, egg and vanilla. Add milk and dry ingredients. Fold in blueberries. Put in greased 9x9 pan.
Blend topping ingredients and sprinkle on top.
Bake at 375 degrees for 30 mins. 8 Servings.
