1 zucchini diced

1 carrot diced
1 TBS. veg oil
2 packages of chili seasoning mix
2 cans beans drained...(such as pinto,kidney beans,black beans, or
cannellini beans
2 cans (14.5 oz.) fire roasted diced tomatoe with green chilies or regular
diced tomatoes

in skillet over high cook the zucchini in oil for about 3 minutes.
stir in the seasoning,beans and tomatoes.bring to a boil.
cover and simmer for about 10-20 minutes.
VEGGIE SPAGHETTI ~you can add chicken breast diced...
serve with a nice salad and garlic rolls...

serves about 5 people
