Default yummy turkey burgers!! and side dish

awhile ago i bought some plain frozen turkey burgers, didnt like them. (love ruby tuesdays though!). anyways, found a recipe and changed it up a bit and here it is...these are really good!

1 lb ground turkey breast
1/3 cup crush baked tortilla chips
1/3 cup salsa
2 Tbsp chopped green onion
1 tsp cumin

the recipe also calls for 1/4 c chopped cilantro, 1/4 tsp salt and 1/4 tsp black pepper... i didnt put those in.

combine those ingredients, divide into 4 equal portions, shaping into 1/2 inch thick patty. cook over medium heat.

they dont stay together all that easy, so you have to be careful.

put on a whole wheat bun, add lettuce and tomatos.

WW points... 5 for 1 burger

then i made a side dish..this is sooo yummy!!

i threw in a can of black eyed peas (drained), can of corn kernels (drained), chopped up a green pepper (actually i used something else, its like a jalepno but not as spicy), some onion (i added a lot as i love onion). the recipe also called for chopped tomato, chopped seeded jalepno pepper and fresh cilantro. mix together and chill for a bit. this is sort of like a salsa, but i ate it as a side dish, really good!

Sorry I haven't gotten back to this board in awhile but I have made those turkey burgers twice now and they were a huge hit. My toddler loved them! Thanks for the recipe.

I also haven't been to this board in a while and got so excited to see this recipe! I love turkey burgers but the recipe I use is not very exciting - slightly bland. I will try this next time and spice things up a bit! The side dish also sounds tasty. This meal is right up my alley
