Cinnamon buns

I made these just yesterday and the recipe for the most part is just by memory. My grandma makes them all the time, but adds raisins or apple pieces, which you could easily do(although I don't know how much you'd add, but i'm guessing it's at a preferrence). I know this looks complicated, but it isn't. Just make sure you give yourself some time since the dough needs to rise.

3 TBSP yeast
1cup of warm milk

Disolve the yeast in the milk and add...

1/2 cup sugar
2 eggs
1/4 cup melted butter
1 tsp salt
4 cups of flour

Mix it all up and then dump onto a lightly floured surface. Knead it a bit until it becomes a nice doughy ball. Put back in your bowl and cover with a towel and let rise for an hour. After an hour of rising, roll the dough out into a large rectangle..approx. 20" x 16"(yours could be smaller or larger in either direction).

1/3 cup of softened butter
1 cup brown sugar
cinnamon

Spread the butter all over your large rectangle(i use my hands). Then sprinkle brown sugar all over it...you can use more or less, depending on how much of a sweet tooth you have. Same with the cinnamon - sprinkle it all over. (This is the time you'd add your raisins or apple bits onto the dough)
Roll the dough along the longer side of the rectangle and slowly go across to the other side. Pinch the ends off. With a serated knife, cut the long log into 1" pieces(or as big or as small as you'd like them to be). Place the pieces onto a greased cookie sheet. Let them rise again for 30 minutes and then place into a 400 degree F oven. Mine take about 10-12 minutes but it all depends on your oven(MIL's takes 20 minutes), but they are usually done when the tops are just brown. Take them out and then spread your icing on top...

ICING

1/4 cup of melted butter
1/4 cup of cream cheese
1 1/2 cups of icing sugar
1/2 tsp of vanilla(or more depending on your taste)

Mix it all together and spread it on warm buns...enjoy!

Baked Macaroni and Beef Casserole
3oz elbow maccaroni
8 oz lean ground beef
1/2 cup chopped onion
1/2 cup chopped red pepper
1 cup tomato sauce
1/4 tsp parsley
1/4 tsp basil
1/4 tsp thyme
1/4 tsp fresh ground pepper
1/2 cup grated cheese

preheat oven to 350'
cook maccaroni as directed and drain. Cook meat, onions, peppers and seasonings until meat is no longer pink. Drain off fat, add the tomato sauce cook 3 minutes or until hot combine in a 1 quart baking dish. Sprinkle with cheese. Bake 20 minutes until bubbling and slightly browned

KIM'S SALISBURY LOAVES
what you need
2-5 lbs. hamburger/chuck
1 cup bread crumbs
2 eggs
2 TBS wostershire sauce
1 medium oniuon chopped
salt,pepper,garlic powder(to taste)

what to do
combine mixture of meat
form into patties or nini loaves
bake for 45 minutes at 400 degrees.
pour your fave. Brown gravy mixture over the meat.

Easy Enchiladas.

This recipe uses left over meat or you can make meat especially for the dish which I usually do.

I take a pork or beef roast put in a crock pot with Salsa and garlic powder. Cook all day and then shred with two forks, you can use some of the meat the same day and make taco or something and make the enchiladas the next or make the enchiladas the same day depending on how much time you have.

INGREDIENTS:

Left over shredded chicken, beef or pork
flour tortillas
sliced or chopped olives
1 container of sour cream
1 can of green enchilada sauce
shredded cheddar or jack cheese (or both)

Mix the container of sour cream and can of enchilada sauce in a bowl. Place a little of the sauce in the bottom of 13x9x2 pan (or smaller if you aren't making very many). Put 1 flour tortilla on plate. Fill tortilla with the incredients layer like a burrito. Sauce, meat, olives, cheese. Roll the tortilla and place in dish. Continue rolling tortillas with ingredients until you run out of room in your dish or you make as many as you want. Cover rolled tortillas with remaining sauce, cheese, and olives. Bake in 350 degree oven about 1/2 hour or more until heated through and cheese is melted.

ENJOY.

This recipe is pretty easy and can be changed to suit your taste. I tried it with the red sauce and it didn't work as well. I have also used corn tortillas which I liked but to keep them from breaking while rolling you need to heat them up a little. Otherwise, be creative.
