Cheese Flan
2 Cans of condensed milk (you can use the reduced fat if you want)
1 1/2 cans of evaporated milk (you can use the reduced fat if you want)
1 bar of cream cheese (you can use the reduced fat if you want)
6 eggs
1 tbs of vanilla extract
2 cups of sugar

place sugar in pan and melt on low heat until it becomes liquid - carefull not to burn

place caramilzed sugar in the bottom of an 8x8 pan, spread evenly, even on the sides

blend all other ingredients together and pour into pan

place pan in a slightly larger pan, once inside fill the larger pan with water half way

bake at 350 until tooth pick is inserted and comes out clean

run knife around edges and let cool, flip onto serving dish

Chicken Casserole

4-5 boneless chicken breasts
2 cans cream of chicken soup
1/2 cup sour cream
2 tubes of Ritz crackers
2 sticks of butter

Boil the chicken breasts until done. In a rectangular casserole dish (you may want to use cooking spray for easier clean-up) shred the chicken breasts with a fork covering the bottom of the dish.

Mix the cream of chicken soup and sour cream until well blended and pour over the shredded chicken.

Take the Ritz crackers and mush them into a crumbs. I usually put them in a freezer size Ziploc bag and take my rolling pin to crush them. Put the crumbs on top of the soup/sour cream mixture.

Melt the sticks of butter and pour evenly over the crumbs. Bake uncovered at 350 degrees for 35 minutes.

Veda's Strawberry Salad

Ingredients
2-3oz pkgs strawberry jello
2-10oz pkgs frozen strawberries
1 can (1 lb 4oz) crushed pineapple
2 bananas
1 C. sour cream
1-3oz pkg cream cheese


Dissolve jello in 2 cups boiling water. Add unthawed strawberries until separated. Add undrained pineapple and mashed bananas. Mix well.
Pour half of mixture into 9" square baking pan. Chill until set. Let rest of mixture sit at room temperature.
Whip together sour cream and cream cheese. Spread over first layer. Top with remaining mixture of jello. Chill until set.
Makes 12 servings.
