Easy Taco Bake

1lb. hamburger
sm. onion chopped
1 pkt. taco seasoning
2/3c water
1c. corn (optional)
Doritos
1 pkg. shredded taco cheese

Fry hamburger and chopped onion in skillet. Drain fat. Put hamburger, taco seasoning, and water back into skillet and cook on med low heat. While taco meat is cooking take a medium sized baking dish and place Doritos in bottom of dish. At this point if you are going to use corn add it to the hamburger mix. Cook for about two minutes. Pour taco miture over Doritos and top with shredded taco cheese. Bake in a 350 degree oven for about 15-20 min until cheese is nice and melted.

Knock You Naked Brownies

-1 package German chocolate cake mix (18.5 oz)
-1 cup chopped nuts
-1/3 cup + 1/2 cup evaporated milk-divided
-1/2 cup melted butter
-60 vanilla caramels unwrapped (one 14 oz package)
-1 cup semisweet chocolate chips

In a large mixing bowl, combine dry cake mix, nuts, 1/3 cup evaporated milk and melted butter. Press half of the batter into the bottom of a greased 13x9x2 inch glass baking dish. Bake in a preheated 350 degree oven for eight minutes.
In the microwave or top of a double boiler melt caramels with remaining 1/2 cup evaporated milk. When caramel mixture is well mixed, pour over baked layer. Cover with chocolate chips. Chill for about an hour or until the caramel is hard. Press the remaining batter on top of morsels. Return to oven and bake 28 minutes (or less for gooier brownies). Let cool before cutting.

The Ultimate Blueberry Pie
Is there much more enticing than a delicious in-season berry pie? You could also use raspberries, blackberries or mixed berries. This is good with vanilla soy ice cream.

One prepared vegan pie crust
4 cups blueberries
1/2 cup maple syrup
1 cup filtered water
1 1/2 cups agar flakes*
1 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. sea salt
1 1/2 Tbsps. arrowroot powder*
1 Tbsp. lemon juice

Rinse and drain the berries. Place the maple syrup, water, agar, nutmeg, cinnamon and salt in a medium saucepan. Stir and bring to a boil over medium heat, stirring until agar dissolves, about 3 to 5 minutes

Dissolve arrowroot in the lemon juice and a little water to integrate. Add to pan and whisk as mixture comes to a boil and thickens slightly. Remove from heat.

Place berries in a large bowl and pour maple syrup mixture over them. Mix gently. Refrigerate mixture for 15 minutes, then pour into prepared pie crust and return to refrigerator, cooling completely. Serve slightly chilled or at room temperature.
