Cooking Smart is sponsoring a new recipe contest EVERY MONTH! Members can submit their favorite original recipes to be judged by the She Knows Administrative Team. The winner will receive 2000 points to earn fabulous prizes on Points and Prizes, and have their recipe published in the Cooking Smart newsletter.

Be sure to submit your original recipe by the 25th of the month by posting it below.

Easy Pasta Salad

1 package of your favorite tortilini noodles cooked and drained
1 package pepperoni
1 green bell pepper chopped
1 yellow or orange pepper chopped
1 red onion chopped
1 small can sliced black olives
1 8 oz package of sharp cheddar cheese cubed
Your favorite italian dressing (enough to coat pasta and veggies.)

Place tortilini in bowl. Cut the pepperoni in half or fourths add to bowl. Add chopped veggies and cheese. Add your italian dressing. Keep in refridge til time to serve. Great as a cookout side dish or with burgers and hotdogs.

Easy Basil Pesto Pasta

Ingredients
8 ounce package of any pasta of your choice
8-10 ounce jar of basil pesto (found on the isle with spices)
1 package of pesto sauce mix 0.5ounce ( i use knorr the package is green, on isle with spices)
1/4 cup olive oil
3/4 cup water
2-3 tablespoons butter ( you can substitute a little olive oil if you don't want to use butter)
1 container of Parmesan cheese

Directions
Cook pasta according to package directions. While the pasta is cooking in a small sauce pan whisk together 1/4 cup olive oil, 3/4 cup of water, pesto sauce mix, and 3-4 tablespoons of the jar pesto sauce. Bring to a boil stir constantly. Reduce heat and simmer for 5 miutes, stir occasionally. Remove from heat. When pasta is cooked drain off water and stir in 2-3 tablespoons butter and pour sauce from small saucepan over and stir together. Sprinkle Parmesan cheese on top. Serve and enjoy! Makes about 3 servings. I usually serve this with garlic bread.

BEEF TIPS AND GRAVY


what you need:
1-2 lbs. all purpose stew meat
3 cans of brown gravy
1 bag frozen pepper and onions
1/2 cups flour
1/3 tsp salt
1/3 tsp garlic powder
dash or so of black pepper
1/4 cooking oil

WHAT TO DO:
mix flour,salt,garlic,and pepper
flour stew meat
heat oil,add stew meat
heat till browned
add 3 cans gravy
add 1/2 bag of pepper onion mixture
cover cook for 45 minutes on simmer...
serve on a bed of fluffy rice...
