Default Smoked Sausage And Potatoes

Smoked Sausage And Potatoes

  • 4 or 5 potatoes sliced thin with peelings left on
  • 1 small onion
  • 1 bell pepper chopped (I don't always use the pepper)
  • 1 can Campbell's cream of celery soup (no substitutes)
  • 1/3 cup mild cheddar cheese
  • 1/4 cup water
  • 1 stick sausage sliced thin
  • 1 T butter
  • In a buttered shallow baking dish (9x13 is what I use) line it with the sliced potatoes.
  • In a separate sauce pan sauté peppers and onion till transparent.
  • Add all other ingredients and stir until cheese melts.
  • Pour over potatoes and bake @ 350º for 45 minutes to 1 hour.
I also like to take a head of cabbage sliced in quarters, add a 1/2 lb bag of carrots-sliced, 1 large onion chopped and a stick of sliced polish sausage to it. I usually put about 2 T of bacon grease also. Cook in a large pot over medium heat till done. (Covered, about an hour)
