Default Savory Rice Casserole

Savory Rice Casserole

  • 1 lb. cut-up stew beef or ground beef
  • 3 c. cooked Minute Rice
  • 2 c. cooked, mixed frozen or canned vegetables
  • 1 medium chopped onion
  • 1-8 ounce can diced tomatoes
  • 2 cups tomato juice
  • 2 c. grated cheese (mozzarella or cheddar)
  • Brown & cook beef. Set aside.
  • Mix together canned tomatoes onion. Set aside.
  • Mix together rice & vegetables in ovenproof bowl. Stir in beef
  • Press mix down tight in bowl. Pour tomato juice evenly over rice mixture
  • Spread tomato & onion mix evenly over rice
  • Sprinkle grated cheese evenly over tomato mix
  • Bake, uncovered 350, 30 minutes or until cheese is golden
  • Let sit for 5 minutes before serving.
    serve with corn on the cobb and garlic bread
