Savory Rice Casserole
Savory Rice Casserole
- 1 lb. cut-up stew beef or ground beef
- 3 c. cooked Minute Rice
- 2 c. cooked, mixed frozen or canned vegetables
- 1 medium chopped onion
- 1-8 ounce can diced tomatoes
- 2 cups tomato juice
- 2 c. grated cheese (mozzarella or cheddar)
- Brown & cook beef. Set aside.
- Mix together canned tomatoes onion. Set aside.
- Mix together rice & vegetables in ovenproof bowl. Stir in beef
- Press mix down tight in bowl. Pour tomato juice evenly over rice mixture
- Spread tomato & onion mix evenly over rice
- Sprinkle grated cheese evenly over tomato mix
- Bake, uncovered 350, 30 minutes or until cheese is golden
- Let sit for 5 minutes before serving.
serve with corn on the cobb and garlic bread
