King Ranch Chicken Casserole
- 4 lb chicken (cooked and boned)
- 8 oz spaghetti
- 1/2 lb oleo
- 1 C flour
- 1 qt milk
- 1/2 lb American cheese
- 1/2 lb old English cheese
- 1 can cream of mushroom soup
- 1 C celery
- 1 green pepper
- 1 onion
- 1 stick oleo
- 1 c Ritz cracker crumbs
- Cook spaghetti in chicken broth.
- Make a white sauce from the oleo, flour and milk.
- Add the cheeses and soup.
- Cook the celery, pepper and onion in water until tender and mix together with all other ingredients.
- Melt 1 stick oleo and add the crumbs to the oleo.
- Add these to the top of the casserole before baking.
- Bake at 350º for 30 minutes
- *serve with garlic bread
