Fried green Tomatoes

3 or 4 large green tomatoes
2 cups flour
oil
salt and pepper to taste (1/2 tsp)

Slice the green tomatoes like you were making them for sandwiches not to thin. Place oil in skillet. In a bowl put the flour and salt and pepper in. place tomato slices in flour and make sure the slices are covered well. Shake off extra flour and place in skillet. I prefer to cook on a medium heat to not cook too fast or to slow. Cover and turn the tomatoes. Cook until tomatoes are a golden brown color. Or darker if you wish.
