Dry Pork Chops

My mom always makes this pork they think it's so tender I think they must have stronger teeth because it takes me forever to chew one bite that doesn't even get fully chewed up which really tires out my jaw .

So how can I make a pork more softer and moister for me so I can easily eat it since that's what she's making for easter dinner .
