Default Focus settings,meter setings and expodisk question

Laura I hope you are around today because I know you have the expo disk

I am going later on today to take pics of 2 littles
a 3 yr old and an 8 month old

my first question is with the expo disk I am a bit confused on how to use it
this is what I think I should be doing
Put it on my lens, standing where the subjects would be looking at me. Set my camera for the correct exposure and take a pic
set it as my wb

is that right ?

my second is about focusing
I should set my f stop at like a f9 or higher?
What about other focus settings ?

single focus or continous ?
Right now i have it on single

how about metering ?
i have had it set to spot , but I read its best to have it set to center while you are still learning everything else? Thoughts?
