It's November!! Time to cuddle up and get cozy for the winter (for those of you not in tropical climates, at least!) The leaves have fallen, there may even be snow on the ground where you are - time to haul out those winter coats and get into the Fall/Winter spirit!

Amanda has been using "pottersclay" or some variation of that as her name for everything since she was 15. She came up with that because God is the potter and we are the clay. "Yet, O Lord, you are our Father. We are the clay, you are our potter; we are all the work of your hand." Isaiah 64: 8. She met her DH in 1999 when she was in college. They got married in 2002. Three years ago they decided to TTC and she went off the pill and have been consciously TTC for 2.5 years. She joined SK a little over two years ago and is an active member of TTC Baby Number 1.
Amanda enjoys gardening, reading, camping, making youtube videos (mostly about gardening). Her favorite time of year is Fall because she loves the beautiful colors and the temperatures; she likes to be able to wear a sweatshirt outside and be comfortable. Amanda's favorite food is chinese fried rice. The thing she enjoys doing most with her DH is camping.
We're all hoping that Amanda graduates soon with a sticky bean!

PUMPKIN CHEESECAKE BARS
Ingredients
1 cup all-purpose flour
1/3 cup packed brown sugar
5 tablespoons cold butter or margarine
1 cup finely chopped pecans
1 (8 ounce) package cream cheese, softened
3/4 cup sugar
1/2 cup cooked or canned pumpkin
2 eggs
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon
1 teaspoon ground allspice
Directions
In a bowl, combine flour and brown sugar. Cut in butter until crumbly. Stir in pecans; set aside 3/4 cup for topping. Press remaining crumb mixture into a greased 8-in. square baking pan. Bake at 350 degrees F for 15 minutes or until edges are lightly browned. Cool on a wire rack.
In a mixing bowl, beat cream cheese and sugar. Beat in the pumpkin, eggs, vanilla, cinnamon and allspice. Pour over crust. Sprinkle with reserved crumb mixture. Bake for 30-35 minutes or until golden brown. Cool on a wire rack. Cut into bars. Store in the refrigerator.
