It was a white pizza with chicken (grilled), artichokes and spinach. I made the kids cheese. We had a garden salad with balsamic vinaigrette (my favorite).
Question, do you all meal plan for the week or do you just decide as the week goes along?

My problem is I don't have the time to prepare food for the week. And usually I don't get off work until 6pm and I'm so tired. DH cooks sometimes but only knows how to make 1 thing.

I usually plan my meals every Sunday for the following week, although sometimes things come up and throw my plans off, but I try.
Tonight we're having ham, macaroni & cheese and carrots, boring I know. Just not much in the mood for a "fancy" meal.
Kim, my Goulash recipe isn't a secret. I actually got it from one of my "Cooking for 2" magazines.  I serve it over noodles.
P.S. This recipe only serves 2, so you would need to double or triple it to feed a larger family.
Hungarian Goulash
INGREDIENTS
2 tablespoons all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
3/4 pound boneless beef round steak, cut into 1-inch cubes
1/2 cup coarsely chopped onion
1 teaspoon butter
1 teaspoon canola oil
1/2 cup reduced-sodium beef broth
1 tablespoon tomato paste
1 garlic clove, minced
1 teaspoon paprika
1/8 teaspoon dried marjoram
1/8 teaspoon caraway seeds
1/8 teaspoon lemon juice
Hot cooked noodles, optional
DIRECTIONS
In a large resealable plastic bag, combine the flour, salt and pepper. Add beef cubes and shake to coat. In a skillet, cook beef and onion in butter and oil until onion is tender. Stir in broth, tomato paste, garlic, paprika, marjoram, caraway seeds and lemon juice. Bring to a boil. Reduce heat; cover and simmer for 1 to 1-1/2 hours or until meat is very tender. Serve over noodles if desired. Yield: 2 servings.
NUTRITIONAL INFO
Nutritional Analysis: One serving: 1 cup goulash equals 310 calories, 10 g fat (3 g saturated fat), 102 mg cholesterol, 333 mg sodium, 13 g carbohydrate, 2 g fiber, 41 g protein. Diabetic Exchanges: 5 very lean meat, 1 starch, 1 fat.

Yep we're having mac n' chs and potatoes...  need to add some protein in there but not sure what. We don't have ham in the house. Might just eat some soy patties later.
Lizz is coming over and we're going to watch the shows tonight.

Tonight we had pasta with an eggplant marinara sauce, garlic bread, and a caesar salad.
I try to meal plan as much as possible because my life is just so busy, and I don't have the time to think of something each afternoon. It also helps me save money when I go to the grocery store.
