Hawaiian Bread Pudding

Bread Pudding 
8 tbsp. margarine

16 oz. loaf sweet bread

6 eggs, beaten

1 - 12 oz. can low-fat evaporated milk

1 teaspoon vanilla extract

2/3 cup sugar

1 to 1-1/2 teaspoons cinnamon

1 cup raisins

2 cups sliced mixed fruits (bananas, diced apples or canned fruits, like peaches, pineapples, mangoes, grated coconut)
Sauce 
1 oz. mango, peeled and sliced

2 tablespoons dark rum (optional)

3 tablespoons yogurt

1 tablespoon lemon juice
1. Melt butter in 9 x 13 inch pan. Break or cut sweet bread into cubes in a large mixing bowl. Mix wet ingredients (eggs, milk, vanilla) together. Add dry ingredients (sugar, cinnamon) to wet mixture and beat lightly. Pour over bread cubes. Mix to moisten.
2. Hydrate raisins, covered with water, by microwaving for one minute on high power or setting in hot water. Add to mixture. Add sliced bananas, apples or canned fruits to mixture. Pour into buttered pan.
3. Bake at 325 degrees for 40 to 45 minutes. Test for doneness by inserting a knife blade into center. If the knife is clean, the pudding is ready. If preferred, brown top under broiler a few minutes. Cool on rack.
4. Sauce: in blender, puree mangoes and lemon juice. Add rum and blend well. Lace plate with mango sauce and top with bread pudding. Pile yogurt on to sauce.
