I recently introduced Alex to
Sunbutter (we're holding off on peanuts and tree nuts til he's older). I converted a peanut butter square recipe that tastes great with the Sunbutter. I'm sure it would be great with other peanut butter substitutes. I haven't tried it with other cereals but I think it might be good with rice krispies, puffed rice or other cereals instead of the oats.
Sunbutter Squares
Makes 16-24 squares
1 1/2 cups sunbutter (or other nut butter)
3/4 cups brown sugar
1/2 cup molasses
5 cups rolled oats
Mix together sunbutter, sugar and molasses in a large pan. Heat over medium until bubbles form, stirring constantly to prevent scorching. Remove from heat and add oats. Press into a greased or wax paper lined brownie pan (8x8 or 9x13, larger pan makes thinner squares). Use waxed paper to press the mixture firmly into the pan. Cool and cut into squares.
