Peach Torte

Ingredients:
3/4 cup plus 1 T. sugar, divided
6 T. milk-free, soy-free margarine, softened
1/4 cup light brown sugar, firmly packed
1 tsp. vanilla extract
3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together
1/2 tsp. lemon rind, grated
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground cinnamon
1 can sliced peaches, drained
Directions: Preheat oven to 350 degrees. Coat 9-inch springform pan with cooking spray. Set aside. In large bowl, with electric mixer on medium speed, beat ¾ cups sugar, margarine, brown sugar, and vanilla extract until well blended. Add water, oil, and baking powder mixture. Beat well. Stir in lemon rind, flour, baking powder, and salt. Mix well. Pour batter into prepared pan. Arrange peaches on top of batter, pressing slices gently into batter. In small bowl, combine remaining sugar and cinnamon; sprinkle evenly over peaches. Bake 1 hour. Cool in pan on a wire rack.
