Default Pancakes

I make these for our son, so I know they are milk, soy, nut and egg free. They take a bit longer to cook than reg. pancakes but so far so good. You can add in banana's, blueberries, etc.

Pancakes

1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/4 salt
1/4 c applesauce (replacement for 1 egg)
little less than 1 cup rice milk
2 tbsp safflower oil


In a mixing bowl stir together flour, sugar, baking powder, and salt. In another mixing bowl combine applesauce, milk, and cooking oil. Add to flour mixture all at once. Stir mixture just until blended but still slightly lumpy.
