Fudge Frosting
Fudge Frosting
1/4 cup dairy-free margarine
1 cup granulated sugar
1/4 cup cocoa
1/4 milk substitute (I used chocolate rice milk to give it extra chocolate flavor)
In a large saucepan, melt margarine and then add all the other ingredients. Turn the heat to low and stir mixture until the ingredients are dissolved (this takes awhile). Once the sugar is dissolved, bring the frosting to a boil. Boil for one minute, stirring occasionally. Remove icing from heat and with a stand mixer or electric beater beat until creamy. Frost your cake soon after because this icing does set up like fudge as it cools. This frosting is especially good on the inside of a layer cake, but will also work for the outside of a cake or cupcakes.
Makes enough for 12 cupcakes or one layer 8 or 9 inch cake. I tripled the recipe for a three layer cake.
