Donut recipe D,S,W, and can be E free
½ Cup potato starch
½ Cup cornstarch
2 Tablespoons sugar
¼ teaspoon baking soda
1 teaspoon baking powder
1 egg (I'm sure egg replacer would work)
scant ½ cup buttermilk (I use ½ cup rice milk and add ½ Tbs. vinegar)
½ teaspoon xanthan gum
¼ teaspoon vanilla flavoring
pinch of salt
2 cups oil for frying
Glaze:
½ cup powdered sugar
1/8 cup water
Combine all ingredients in medium bowl. Mix well to remove all lumps. Batter will thicken slightly, give it a minute or two.
Heat oil in medium sauce pan to 375. You may wish to use an electric fryer if you have one.
Drop batter by rounded teaspoon into hot oil. Do not crowd doughnuts.
Once lightly browned on both side, remove and place on paper towels to drain.
To make glaze, combine powdered sugar and water. Stir until all lumps are dissolved. Dip doughnuts (while still quite warm) into glaze to coat. Allow to cool. Doughnuts may also be rolled in powdered sugar alone if desired.
Makes about 20 small doughnuts.
You can also drizzle in oil for funnel cake too.
