Default Banana muffins (no dairy, nuts or eggs)

I also have a good wheat-free recipe if anyone is interested, the following recipe uses wheat flour.

Banana Muffins
Makes 12 muffins
These are really good and the flaxseed meal gives them extra fiber and Omega-3s.

2 ripe bananas
1 cup sugar
1/4 cup vegetable oil
4 tablespoons water
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup flaxseed meal
1 tablespoon baking soda
1/2 teaspoon salt

Preheat oven to 325 degrees F. In a large bowl, mash peeled bananas with a fork. Add sugar, oil, water and vanilla. Mix together dry ingredients and then add to banana mixture. Mix until just combined. Scoop or spoon into oiled or lined muffin pan. Bake for 20-30 minutes or until golden brown.

Tip- If you purchase ground flaxseed meal, it is best kept double bagged in freezer bags and IN the freezer. Otherwise it can go rancid and pick up funky odors. I keep ground meal for about 2-3 months this way. You can also choose to grind your own flaxseed meal in a coffee grinder or blender. The whole flaxseed keeps much better.
