Apple cake (no eggs, nuts or dairy)
I made this up today and it turn out great!. I bet it would be good with date sugar instead of the brown sugar. You can substitute 2 eggs for the flaxseed and water.
Apple Cake
2 tablespoons flaxseed meal
4 tablespoons warm water
½ cup margarine (check ingredients for dairy)
¾ cup brown sugar
1 teaspoon vanilla
1 ¾ cup flour (I used 1 cup of whole wheat and ¾ cup all purpose)
½ cup rolled oats
½ teaspoon baking soda
1 teaspoon cinnamon
1/8 teaspoon salt
1 cup peeled, diced apples
Preheat oven to 350 degrees F. In a small cup, mix together water and flaxseed meal; set aside. In a large bowl or mixer, beat brown sugar and margarine until light and fluffy. Add flaxseed mixture, and vanilla to the sugar. Sift together flour, baking soda, cinnamon, and salt. Add flour mixture to the margarine; stir until just combined. Then fold in oats and apples. Spread into parchment lined (or greased and floured) 9â€x9†square pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
