allergy-free brownies from allrecipes.com
i found this recipe that suits my son ron, who has several allergies. just wanted to share it with you all.
2 ripe bananas, mashed
1 1/2 cup vegetable oil
1 cup potato flour
1 cup brown rice flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
5/8 teaspoon cream of tartar
1 1/2 teaspoon sea salt
preheat oven to 325 degrees. grease 9x13 baking pan.
in large bowl, mix together potato flour, rice flour, sugar, cocoa powder, baking soda, cream of tartar and sea salt. blend together the bananas and oil in a separate bowl. stir the banana mixture into the dry ingredients until well blended. spread evenly in the bottow of the prepared pan.
bake for 20-25 minutes in the preheated oven, until they appear dry on the top. cool completely, and cut into squares.
makes 20 servings.
does anyone know if all allergy free all purpose baking flour can be substituted for potatoe and rice flour. i hate to buy the big bags of the potatoe and rice flour if i could just use what i already have for my son. thanks in advance. i hope the recipe is helpful. becky
