Do you think the peanut oil in this recipe is important? I'm wondering if I can substitute another kind of oil or if the peanut flavor is key in the recipe?

ya know what I've never made it with peanut oil. I usually use olive or canola oil.

I made this for dinner tonight and it was awesome! Even DH (a meat lover), loved it.
I had to add some vegetable broth b/c it was sticking to the bottom of my pan and I was afraid of burning it, but other than that, I had no problems. I highly recommend this one!

I was so shocked . . . he LOVED it . . . gobbled it right up. We're having it again tonight as luscious leftovers, so we'll see if he still likes it the second time around.
