Hungarian Jam Filled Cookies- this one is fun for kids ;)
Hungarian Jam filled Cookies
1 ½ Cups (3 sticks) unsalted butter –slightly softened
¼ teaspoon salt
1 cup granulated sugar
3 egg yolks
2 ¼ teaspoons vanilla extract
1 teaspoon almond extract
3 ¾ cups flour
1 jar jam/preserves, whatever flavor you like, I personally
prefer raspberry in these cookies J
Makes 55-60 1 ¼ inch cookies J
Preheat oven to 375. Grease or spray baking sheets.
In a mixing bowl, beat butter until lightened and smooth.
Add salt & sugar and beat until light and fluffy. Beat in egg yolks,
Vailla & Almond extracts. Gradually add flour until
thoroughly incorporated (I find it easier to use my hands than a spoon)
Pinch off pieces of dough and roll into about 1 inch balls. Space about 1 ½ inches
Apart on baking sheets. Press a deep indentation in each cookie using your thumb.
Bake for 7 minutes in oven. Remove from oven, fill each cookie with a little jam and
Put back into the oven until cookies are tinged with brown and jam is melting.
Cool and enjoy!!!
