Fried Banana with Coffee and Rhum
* 1 cup of flour
* 1 egg, beaten
* 1/2 cup milk
* 1 teaspoon Baking powder
* pinch of salt
* 1/4 cup sugar
* 2 teaspoons melted butter
* 5 bananas not too ripe
* cooking oil for frying
Coffee sause:
* 1/2 cup strong coffee
* 2 soapspoons (potato) starch
* 3 soapspoons melted butter
* 2 teaspoons Rhum
- Mix the flour, baking powder, salt and sugar together.
- Seperately, mix the egg, milk and butter.
- Add the dry ingredients and mix well.
- Cut the bananas and pass them through the dough and then fry the banana in hot cooking oil until golden.
- Leave them to drip on a brown paper bag, or anything you have to absorbe the excess greese.
- For the coffee sause: melt the sugar on low heat, adding the coffee little by little, always mixing.
- Mix the starch and the 2 spoons of cold coffee together and add to the heated mixture.
- When the sause if boiling and thickened, remove from the heat and add the butter and Rhum.
- Pour the sause over the fried bananas.
