Dessert of the week: Lemon Squares
Heat oven to 350*
1 cup flour
1/2 cup softened butter or margerine
1/4 cup powdered sugar
1 cup granulated sugar
2 tsp lemon peel (if desired)
2 tablespoons lemon juice
2 large eggs
powdered sugar
*mix flour, butter and powdered sugar.
Press into 8x8 pan.
*Bake crust 20 minutes.
*Beat remaining ingredients until light and fluffy. Pour over crust and bake 25-30 minutes longer. Cool. Sprinkle powdered sugar over top before cutting.
These can be made into lime bars by substituting lime for the lemon called for.
