Chocolate Glazed Orange Crisps/cookies
Chocolate Glazed Orange Crisps
1 1/3 cup flour
¾ cup unsalted butter (1 ½ sticks)
2/3 cup granulated sugar
1 large egg
1 ¼ teaspoon vanilla extract
Finely grated zest of 1 large orange
Finely grates zest of ½ lemon
Glaze:
1 ½ ounces unsweetened chocolate
1 ¼ cup powdered sugar
1 tablespoon unsweetened cocoa powder
¾ teaspoon light corn syrup
3-4 tablespoons hot water or coffee
Preheat oven to 375. Grease or Spray baking sheets.
Beat butter in mixing bowl until light & smooth.
Add sugar and beat until fluffy. Add egg and beat a few seconds longer.
Add vanilla and beat a few seconds longer. Gradually beat in flour until fully
Incorporated. Stir in orange and lemon zests until well mixed.
Using a spoon, drop a small amount of mixture on baking sheet. Use a knife to smooth out (you want these to be thin) Bake about 10 minutes until cookies are golden brown around edges.
To prepare glaze:
Melt chocolate in a double boiler/bowl set on top of simmering water.
Sift powedered sugar and cocoa into bowl. Stir in corn syrup and 3 tablespoons
Of hot water or coffee. Add the mixture to melted chocolate until smooth and glossy.
If you need to make it a little thiner, add an additional tablespoon of water or coffee. You want it thin, but not runny.
