Carrot Cake
Did this last night, it was quick and easy!
Ingredients:
4 eggs
250g sugar
500g carrots
30g melted butter
1 orange
200g self-raising flour
Method:
1- cook the carrots, when cooked drain the water and reduce to "mashed carrots". Cool;
2- beat sugar with eggs;
3- add mashed carrots, mix well;
4- add melted butter;
5- add the juce of the orange;
6- add the flour, mixing well;
7- pour mixture in a low 30x30cm aquare "swiss roll" baking dish;
8- bake in 200ºC for 20 minutes;
9- carefully roll the cake into a swiss roll, using the aid of a cloth (or what ever you like);
10- sprinckel with sugar.
Note:
- Before you roll the cake, you can spread chocolate, jam, or anything you like so your swiss roll can have a filling.
- If you like cinnamon you can add a tea spoon of cinnamon after adding the flour.
