4 slices of bacon, diced
1/4 cup diced onion
1 cup chopped ramps (or substitute leeks or scallions)
3 thick slices of bread, cut into cubes
7 eggs
3/4 cup skim milk
2 teaspoons Dijon mustard
Salt and pepper to taste
3 tablespoons grated Parmesan cheese
