4 eggs
8 ounces fresh or canned crab meat
1/2 tsp dried mustard
Dash cayenne pepper
9 slices white bread, buttered, crusts removed and quarters
10 ounces shredded cheese, ideally a mixture of Monterey jack and mild cheddar
Butter a souffle dish. Beat eggs in a seperate bowl. Add crab meat, mustard, and pepper. Beginning with bread, layer half the bread, half of the cheese, and half the egg-crab meat mixture, then repeat, ending with a final sprinkle of cheese. Bake in a 375 degree oven for 1 1/2 hours.
