I posted this under Kimbaby's Gumbo recipe but meant to post it in it's own thread to make it easier to look through.
Here is a new recipe I just got for main course but have yet to try.
Saucy Lemon Chicken
4 tblsp buter
8 boneless, skinless chicken-breast halves
2 tblsp fresh lemon juice
2 tblsp chicken broth
1/2 tsp grated lemon zest
1/4 tsp salt
1/8 tsp white pepper
1 c whipping cream
1 c sliced mushrooms
1/3 c grated parmesan cheese
melt butter in large skillet over medium heat until foamy. Add chicken to skillet in single layer. Cook , turning once, until chicken is browned and no longer pink in center, about 10 minutes.
Remove chicken to broilerproof baking dish and set aside. Drain drippings from skillet. Preheat the broiler
Add lemon juice, chicken broth and lemon zest to skillet; cook and stir over medium heat 1 minute. Stir in salt and pepper.
Gradually pour cream into skillet, stirring constantly. Simmer over medium-low heat until hot; do not boil. Pour hot cream sauce over chicken; sprinkle with mushrooms and parmesan.
Broil chicken about 6 inches from heat until lightly browned.
