Mozzarella Ranch Chicken
1/4 cup olive oil
1/3 cup dried bread crumbs
1 packet dry Hidden Valley ranch dressing
1 pound uncooked boneless, skinless chicken breast
4 oz mozzarella
1/2 cup sliced mushrooms
2 garlic cloves, minced
Marinate the chicken in the olive oil and garlic for at least an hour. Mix the ranch packet with some breadcrumbs and coat the chicken. Add to a baking dish coated with non stick spray. Bake for about 40 minutes, or until no longer pink inside. Add mushrooms on top of chicken then the mozzarella cheese and put back into the oven until the cheese melts.
