Default Irish Stew

This hearty stew can also be made in a slow-cooker – just brown the lamb, add all ingredients to a slow-cooker and cook on HIGH for four to six hours.

Serves 8

Ingredients:
2 tablespoons vegetable oil
2 pounds boneless loin of lamb, trimmed, cut into chunks
2 onions, halved, thinly sliced
2 carrots, thinly sliced
1 turnip, peeled, diced
2 russet potatoes, scrubbed, diced
Salt and black pepper to taste
1 tablespoon fresh thyme leaves
1 tablespoon fresh minced parsley
3 cups water or lamb stock
