Have Any Easy Breakfast Dishes To Share?
I will be having overnight guests this weekend and I would like to offer something better than coffee and toast this time! I found a couple great recipes already, but wanted to know if anyone else had any to share?
Pear Coffee Cake with Ginger Pecan Crunch Topping
Delicious coffee cake courtesy of The Inn on Sea Street, Bed and Breakfast, Hyannis, Massachusetts
2 1/2 cups flour
3/4 cup sugar
1 cup dark brown sugar
1 teaspoon salt
1 teaspoon nutmeg
3/4 cup Crisco cooking oil
1 slightly beaten egg
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups chopped ripe pears
Topping
1/2 teaspoon ground ginger
1 cup chopped pecans
1. Mix together flour, sugars, salt, nutmeg and oil.
2. Set aside 1 cup of mixture for topping.
3. Add 2 cups chopped ripe pear to the rest of the above mixture.
4. Add egg, buttermilk, baking soda, and baking powder.
5. Topping: Add ginger and pecans to 1 cup of reserved mixture.
6. Spread in greased 9" x 13" x 2" sheet pan.
7. Sprinkle topping over top.
8. Bake at 350 degrees for 40 minutes or until knife inserted comes out clean.
Breakfast Casserole
Mix this up at night for a super easy and scrumptious breakfast for your overnight guests.
1 lb bulk sausage, like Jimmy Dean
4 cups bread, cut in pieces (day or two old is best)
2 cups shredded cheddar cheese
10 eggs, lightly beaten
4 cups milk
1 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 cup sliced mushrooms
1. Cook and crumble sausage, drain.
2. Put bread in well buttered 9x13 baking dish.
3. Sprinkle with the cheese.
4. Combine the eggs, milk, and spices.
5. Pour over the bread and cheese.
6. Sprinkle sausage and mushrooms on top.
7. Cover and chill overnight.
8. Heat oven to 325*.
9. Bake, uncovered for 1 hour.
Cinnamon Roll Toast
2 slices bread (white or wheat)
1 teaspoon cinnamon
1 tablespoon butter
1/2 cup confectioners' sugar
1/2 tablespoon water
1/8 teaspoon vanilla
1. Sprinkle cinnamon on plain piece of bread.
2. Spread it in and around with a knife.
3. Butter that side of the bread.
4. Place buttered side down in a moderately hot skillet until lightly toasted.
5. Turn and leave on other side just long enough to keep it from feeling soggy.
6. Spread hot toast with glaze made with confectioner's sugar, water and vanilla.
Baked Ham and Cheese Omelet Roll
This is an easy way to serve omelets. In our house, it takes me forever to make breakfast on the stove top! Baking this is soooo much easier. Feel free to add or subtract to suit your tastes (bacon, sausage, onions, peppers, etc.)
6 eggs
1 cup milk
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked ham, chopped or 9 slices of any deli ham
1 cup shredded sharp cheddar cheese
1. Preheat oven to 450 degrees.
2. Beat eggs and milk until fluffy.
3. Add flour, salt and pepper and beat or whisk until smooth.
4. Pour into a buttered or greased 9 x 13 baking dish or pan.
5. Bake for about 15 minutes or until eggs are just about set.
6. Sprinkle with chopped ham or lay slices of ham evenly on top.
7. Sprinkle with cheese.
8. Bake for about 5 minutes more or until cheese is melted.
9. Starting at short side, roll up omelet while still in pan.
10. Place seam side down on serving dish.
11. Cut into slices.

Found this to share  Haven't made it in a really long time, but it's good
Baked French Toast
Ingredients:
2 large eggs
1/2 cup milk
2 tsp powdered sugar
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
4 slices bread (I like using texas toast)
2 Tbsp butter, cut into small pieces
Instructions:
Preheat oven to 425°F. Coat a baking sheet with cooking spray.
Lightly beat eggs with a fork in a shallow bowl. Whisk in milk, sugar, vanilla, and cinnamon.
Soak bread in egg mixture, then transfer to baking sheet. Sprinkle with butter and bake until golden, 8 to 10 minutes.
Top with a little maple syrup, if desired.

I like to have lots of options, so I can pick and choose according to mood.. is that silly? lol That french toast recipe is great, its a huge pain making that piece by piece!

Here is one of my favs:
Christmas Morning Egg Casserole
½ cup (1 stick) butter or margarine
10 eggs
1 lb. cottage cheese
2 cups (16-ounces) Monterey Jack cheese, shredded
1 (4-ounce) can chopped green chiles
½ cup flour
1 tsp baking powder
Dash salt
1. Melt butter in a 9 x 13-inch baking dish. Combine remaining ingredients; pour into baking dish. Bake at 400º for 15 minutes; reduce heat to 350º (do not remove pan from oven) and cook for 40 minutes longer.
Yield: 10 servings

Artichoke and Ham Strata
This scrumptious casserole from Cooking Light must be made the night before. By morning, the flavors blend to perfection and the English muffins will soak up the rich sauce.
3 English muffins, split and cut into quarters
Cooking spray
1 Tbsp butter, melted
1 cup chopped lean ham (about 4 ounces)
½ cup (2 ounces) grated fresh Parmesan cheese
2 Tbsp chopped fresh chives
1 (14-ounce) can artichoke hearts, drained and chopped
3 large garlic cloves, minced
1/8 tsp nutmeg
1 (12-ounce) can evaporated fat-free milk
3 large eggs
3 large egg whites
1. Arrange muffin pieces, crust sides down, in an 8-inch square baking dish coated with cooking spray; drizzle with butter. Arrange ham and next 4 ingredients (ham through garlic) over muffin pieces.
2. Combine nutmeg and remaining ingredients in a bowl; stir well with a whisk. Pour over muffin mixture. Cover; chill 8 hours or overnight.
3. Preheat oven to 375°.
4. Uncover strata; bake at 375° for 50 minutes or until set. Let stand 10 minutes before serving.
Yield: 6 servings
