Default Ground beef

I need some ground beef recipes! Something simple, that isn't tacos, hamburgers or spaghetti. DH's not a big fan of meatloaf, either. What do you like to make with ground beef?

Unstuffed Cabbage

1 pound extra lean ground beef (at least 95% lean)
1 medium onion, chopped
1 tsp minced garlic
1/2 head cabbage, shredded or 1 (10 oz) bag angelhair coleslaw
1 (8 oz) can tomato sauce
2 tsp lemon juice
1/2 tsp pepper
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp salt

Brown the meat, onion and garlic in a large skillet. Add cabbage when meat is mostly browned. Cover and allow cabbage to wilt a bit. When cabbage is done to preference, add the tomato sauce through salt and combine well. Let simmer five minutes, then serve.

Church Meat Balls 2

1 pound 80% lean ground beef
1/2 cup plain bread crumbs
1/2 cup finely chopped onion
1/4 tsp garlic powder
1/2 tsp basil
1/4 tsp parsley
1/4 tsp salt
1/8 tsp pepper

Mix all ingredients.

Form into 16 meat balls. Place on rack on baking sheet (I use a cookie
cooling rack).

Bake at 325 degrees for 15 min. or until done.

Shepherd's Pie

2 large potato(es), peeled and cut into 2-inch pieces
1/4 cup fat-free sour cream
1 Tbsp reduced-calorie margarine
1/8 tsp table salt, or to taste
2 tsp olive oil
1 cup onion(s), chopped
2 medium carrot(s), diced
2 medium stalk celery, diced
1 pound uncooked ground beef
3 Tbsp all-purpose flour
1 Tbsp rosemary, fresh, chopped (or 1 tsp dried)
1 tsp dried thyme
1/2 tsp table salt
1/4 tsp black pepper
2 cup canned chicken broth, or beef broth

Instructions

Preheat oven to 400ºF.
Place potatoes in a large saucepan and pour in enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender. Drain potatoes, transfer to a large bowl and add sour cream and margarine; mash until smooth, season to taste with salt and set aside.
Meanwhile, heat oil in a large skillet over medium-high heat. Add onion, carrots and celery; cook 3 minutes, until soft. Add turkey and cook 5 minutes, until browned, breaking up the meat as it cooks. Add flour, rosemary, thyme, 1/2 teaspoon of salt and pepper; stir to coat. Add broth and bring to a simmer; simmer 3 minutes, until mixture thickens.
Transfer turkey mixture to a 9-inch, deep-dish pie plate. Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Bake 30 minutes, until potatoes are golden. Slice into 6 pieces and serve.


TATER TOT CASSEROLE

1 pd lean ground beef (7%fat)
1 chopped onion,
1 can cream of mushroom soup (98%FF),
1 can cream of chicken soup (98%FF),
72 onion flavored tater tots (frozen)
1 cup "light" cheddar cheese (shredded)
Heat oven 350. Spray 9x13 dish. Place tater tots on bottom of dish. Brown beef and onion in large skillet (drain off excess liquid), mix in soups. Mix well. Spread mixture on top of tater tots. Sprinkle cheese on top. Bake 40 minutes.

Easy Beef Casserole

1 1/2 cups cut-up cooked lean beef
1 1/2 cups uncooked elbow macaroni (about 6 ounces)
1 cup sliced celery (about 2 medium stalks)
1/2 cup nonfat milk
1/4 cup chopped onion (about 1 small)
1 1/2 teaspoons dried basil leaves
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1 (8 ounce) jar mushroom stems and pieces -- undrained
1 (8 ounce) can tomato sauce

Heat oven to 350º. Mix all ingredients in ungreased 2-quart casserole. Cover and bake 30 minutes; stir. Cover and bake until macaroni is tender, about 20 minutes longer.

Microwave Directions: Mix all ingredients in 3-quart microwavable casserole; pour 1/2 cup water over top. Cover tightly and microwave on High, stirring every 6 minutes, until macaroni is tender, 15 to 18 minutes. Let stand covered 5 minutes.

How about S.O.S. (**** on a shingle, or if you have kids STUFF on a Shingle!! LOL!)
Brown the hamburger, stir in 1 can of cream of mushroom soup, heat through.
Make mashed potatoes, while browning hamb.
Make toast.
To serve: Toast, hamb mixture, potatoes!
YUM!!

My mom makes Day-go Dish...don't know why it's called that?
and a cheesy potato burger bake.

Day-go Dish

1lb. ground beef, browned
1 can tomato sauce
3/4 c. water
1 onion, chopped
1 bell pepper, chopped
salt and pepper and red pepper to taste
1 bag of egg noodles (or homemade egg noodles-if you want to do the extra work...Dad always made the egg noodles while mom cooked the meat)

After browning the beef, drain it and saute the onions and peppers until onions are clear. Add the beef, tomato sauce, water, and seasoning. Bring to a boil. Add noodles and cook on med. heat until noodles are done.

Cheesy Potato Burger Bake

Mashed potatoes
1/2 c. grated cheddar cheese
1 lb. ground beef, browned
1 can of veggie beef soup
1 onion, chopped and browned with beef
salt and pepper to taste

Mix together beef, soup and onion and place in the bottom of a deep baking pan. Cover with mashed potatoes. Top with cheese. Bake 20 min. or until cheese melts.

Yummy!!!

MOm said that you may need more water for the egg noodles to cook in!
