Braised Brisket With Sweet-Sour Gravy

Serve: 6

3 pounds - beef brisket
2 tablespoons - butter
3 teaspoons salt
Pepper to taste
1 carrot, scraped and sliced
1/2 cup - celery, chopped
1 medium onion, sliced
1/4 cup - vinegar

Cut brisket into 2-inch thick slices.
Melt butter and brown meat on both sides;
add seasonings, vegetables and vinegar.
Cover tightly and simmer 1 1/2 to 2 hours
or until very tender.
Remove meat to hot platter.

If unthickened gravy is desired,
skim off excess fat and
quickly evaporate liquid remaining in pan
by boiling until the required amount remains.

To intensify the sweet-sour flavor, add 1 tablespoon
vinegar and 1 teaspoon sugar.
