I used to have a recipe for pumpkin pancakes. I cant find it and my hubby has been whining for them. Anyone have that recipe or know how to makw them? I remember that it used canned pumpkin but I'll take a recipe using fresh also.

I dont use a recipe, I just add a small can of pumpkin, cinnamon and nutmeg, to my normal recipe, add a little flour if it looks too runny, and a little more milk if it is too thick.

Is there a way to add pumpkin from the can to powdered pancake mix? I am a big fan of pumpkin pancakes. I actually have actually tried some gourmet pumpkin pancake mix that is tasty. But there is nothing like making them from scratch!

Ingredients

1 1/2 cups pancake mix
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 large egg
1 tablespoon brown sugar, packed
1 tablespoon vegetable oil
3/4 cup canned or pureed pumpkin
1 cup water, more or less

Directions

1. In a medium bowl, mix the pancake mix and spices together.
2. In another bowl, whisk the egg and the brown sugar together. Stir in the oil, the pumpkin, and most of the water.
3. Add the liquid ingredients to the dry ingredients. Stir with a spatula until just combined adding more water to obtain the right consistency.

Serve hot with maple syrup
