Looking for a new side dish - cauliflower au gratin
Cauliflower Au Gratin
6 tablespoons butter or margarine
4 ounces chopped, fully cooked ham
1-2 clove garlic, minced
1 head cauliflower, broken into florets
2 tablespoons all-purpose flour
1 1/2 cups whipping cream
1/4 teaspoon salt and pepper
1 pinch cayenne pepper
1 1/2 cups shredded swiss cheese
2-3 tablespoons minced fresh parsley
1. Melt butter in a large skillet.
2. Saute ham and garlic for 2 minutes.
3. Add cauliflower and cook just until crisp tender, about 10 minutes.
4. Combine flour and cream until smooth; stir into skillet and blend well.
5. Add salt, pepper and cayenne.
6. Bring to a boil.
7. Reduce heat, cook and stir for 2 minutes.
8. Transfer to an ungreased 2-qt. baking dish.
9. Sprinkle with cheese.
10. Place under preheated broiler until lightly browned, about 2-4 minutes.
