I've got some recipes for you. Although I will warn you that they may sound kid of iffy, but they are really good!

First one is my fudge recpe. Easy and yummy! You'd never guess that there are beans in it

No Bake Pinto Bean Fudge
Can you think of a better way to eat your beans then as dessert? Another plus is not having to turn on that oven in the summer! When I had tried pinto bean cookies and loved them, I went looking for more things with beans that are desserts. Found this on the internet. This is not a diet dessert...so eat sparingly.

20 min 20 min prep 48 squares

1 C. Pinto Beans ¾ C Cocoa powder
½ C Margarine or butter, melted 1 Tbs. vanilla extract
2 lbs. Powdered Sugar (minus 2 C.)* 1 C Chopped Walnuts

1.Mash beans and heat in microwave for 30 seconds on high.
2.Mix well together all ingredients.
3.Butter a 9x13 inch pan and spread mixture.
4.Put in refrigerator and chill thoroughly.
5.Cut into squares.

* I added the powdered sugar a little at a time and would taste a small bit of fudge. I didn't use all of the powdered sugar that the recipe called for.
I also used gloves on my hands to mix the fudge. Used latex gloves. Put them on and washed my hands like normal then used them to mix the fudge

Dr Pepper Baked Beans

1 28-ounce can pork and beans (or two regular-sized 14-ounce cans)
1 onion, chopped fine 1 green pepper, chopped fine
1 tomato, chopped fine 1/2 cup dark brown sugar
1/3 cup Dr Pepper* 1/8 teaspoon ground cloves (Optional)

Preheat oven to 350 F.

Drain liquid from the pork and beans. Pour beans into a bean pot, if you have one, or a baking dish if you don't. Gently mix in onion, green pepper, and tomato into the beans.
Combine sugar, Dr Pepper, and cloves (if you use them) until sugar is dissolved. Pour evenly over the bean mixture. Bake, covered, for an hour. Check on the beans; they might need a little more time than that, but don't overcook them. You could successfully substitute ginger ale for the Dr Pepper for a different flavor. Yield: 6 servings.
I want to try other sodas/colas and see how the taste changes.

I have more recipes if you would like. Just holler at me!

Peace!
Nancy S.
