Default Grilled Cheese Cheese

What cheese do you use in grilled cheese? I have used cheddar and swiss but want to try something new. Any suggestions?

Why don't you try Gouda? I love Gouda in grilled cheese sandwiches, It really melts good and it has a rich creamy texture. You just have to be careful not to make the slices to thick and let the sandwich rest for a minute after you take it off the heat because the cheese is so runny.
