Okie dokie! Our county fair is having a class for potatoes. Things made with them and craft items with that theme

I have an idea about a craft item, but wonder if anyone has any recipes? And wouldn't you know it, I have a few recipes for sweet potatoes and yams, but they aren't allowed, at least for this year Last year was apples and I made apple bath salts ( it had an apple shaped bath scrubbie attached )

I would love to make a candy bar like the Idaho Spuds bars, which I simply love!! I also have an idea for a dessert, but Ice Cream won't make it through the whole week on display!!

I will state now that if I use any recipe from here, I will include the persons name it is from when I enter it and put it on the recipe card. So, anyone......? I've also heard about candy from potatoes, any help on how to cook them to get it ready for that would be great! I have everything else to make dipped candy.
