Well, it's been more 1 month so I don't think anyone else is going to post....so I'll post 2!!

Mexican Flan
Caramelize ½ cup sugar in 9” round cake pan over low heat.
In blender, mix 5 eggs, 1 can sweetened condensed milk, 1 can evaporated milk, and 1 teaspoon vanilla.
Pour into prepared pan and steam for ½ hour or until set.

Pastel de Tres Leches
Grease and flour 2-9” round cake pans

Separate 7 eggs and beat the egg whites until foamy. Add 1 cup of sugar slowly and beat until stiff. Add the 7 yolks one by one while still beating.

Sift together 2.5 cups of flour with 1 tsp baking powder.

Add alternately to egg mixture:
·flour mixture
·¾ cup milk
·2 teaspoons vanilla
Pour into prepared pans and bake at 375 for 30-35 minutes. Cool in pans.

Mix together
·1 can evaporated milk
·1 can sweetened condensed milk
·1 cup of cream
·1 teaspoon vanilla

Put one layer of cake on a plate and prick with a toothpick, pour half of milk mixture over top. Top with the other layer, prick and pour on rest of milk. Frost with cool whip or sweetened whipped cream. Refrigerate until ready to serve.

OOOH that sounds good, I think I will try that.. Thanks I mostly bake cookies with the kids and i make a lot of Jello.

Well you know how it is, little kids kids like to mostly eat juck food, so food has to be kept as simple as possible, so that they won't argue and just eat it...right?
